Butterscotch Cookies

  • 2-1/4 cups flour
  • 1 teaspoon baking soda
  • 1-1/4 teaspoon salt
  • 1 cup butter, room temperature
  • 3/4 cup (plus) granulated sugar
  • 3/4 cup light or dark brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1-2/3 cups (11 ounce package) butterscotch chips


Combine flour, baking soda, salt in a large bowl with a wire whip. Set aside.

Preheat oven to 375 degrees F. Extra lightly grease (spray cooking spray and wipe-off) or line cookie sheet with parchment paper.
Cream butter and sugars. Add eggs one at a time. Beat in vanilla.

Slowly add in flour mixture until completely combined. Hand stir in butterscotch chips.

Place granulated sugar into a shallow bowl.
Take 1 tablespoon of dough and roll into a ball. Roll ball in sugar. Place on baking sheet.
Bake for 9 to 11 minutes. Cool on baking sheet for 2 minutes. Cool completely on wire racks.
